Recipe came from Bobby Flay's Burgers, Fries and Shakes.
Recipe was reprinted in Best of the Best Cookbook Recipes Vol. 13.

Made with 9 marshmallows toasted under the broiler (plus some for garnish) blended with 1/4 cup whole milk, then 11 oz of vanilla ice cream. Was delicious and unusual. To make two shakes to fit this size glass I increase the recipe by 50%.

Strobist info: Three FL 50R speed lights. One with grid, pointed directly down over the shake, one with barn doors at two o'clock, and one behind the camera through a white fabric diffuser. All three TTL triggered by popup flash.

How to make Sunday supper. By the way, the Frankies cookbook was listed as one of the best cookbooks of 2010 in Bon Appetit. I have to say, I really love those meatballs. The pine nuts add a nice touch. Also we use Panko for the breadcrumbs because that's what we have. I'm not sure if that helps make them so good or not, but I'm going to keep using the Panko just in case.

1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/3 cup unsweetened baking cocoa
3 tablespoons instant coffee granules or crystals
1/2 cup butter or margarine, softened
3 tablespoons hazelnut-flavored syrup for beverages (from 12.7-oz bottle)
1 egg
1 1/2 cups toasted hazelnuts, chopped*
1 cup miniature semisweet chocolate chips
2/3 cup Betty Crocker® Rich & Creamy chocolate frosting (from 1-lb container)
4 1/2 teaspoons hazelnut-flavored syrup for beverages (from 12.7-oz bottle)


1. Heat oven to 350°F. In large bowl, stir together cookie mix, cocoa and instant coffee. Add butter, 3 tablespoons syrup and the egg; stir until soft dough forms. Stir in 1 cup of the nuts and the chocolate chips.

2. On ungreased cookie sheets, drop dough with rounded 1 1/2 tablespoon-size cookie scoop or by rounded tablespoonfuls 2 inches apart. Press each mound to flatten slightly.

3. Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.

4. In small bowl, stir frosting and 4 1/2 teaspoons syrup. Spread about 1 teaspoon frosting on each cookie. Sprinkle with remaining 1/2 cup nuts.

To toast hazelnuts, heat oven to 350°F. Spread nuts in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown.

1/2 cup cold butter
1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1 egg
1 cup finely chopped peeled apple
3/4 cup caramel topping
1/4 cup Gold Medal® all-purpose flour


1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.

2. In large bowl, cut butter into cookie mix using fork or pastry blender. Stir in egg until mixture is crumbly.

3. Reserve 1 1/2 cups cookie mixture. Press remaining cookie mixture into bottom of pan. Bake 15 minutes. Sprinkle apple evenly over crust. In small bowl, mix caramel topping and flour; drizzle over apples. Sprinkle reserved cookie mixture over apples.

4. Bake 20 to 25 minutes or until golden brown. Cool completely, about 2 hours. For bars, cut into 9 rows by 4 rows.

High Altitude (3500-6500 ft): Heat oven to 375°F. In step 4, bake 23 to 28 minutes.

Easy Southwest Teriyaki Chicken with Brown Rice

2 cans of chunk chicken, drained
1.5 cups of Mr. Yoshida marinade
1/2 cup of red onions, chopped
4 cloves of garlic, chopped finely
1 can of black beans, drained
2 cups of brown rice
1 tsp of chipotle powder
dried parsley for garnish
1 tbsp of olive oil

1. Cook brown rice in rice cooker.
2. Mix Yoshida sauce with red onions and garlic. Stir in chicken.
3. Heat pan to med-high heat with olive oil.
4. Warm the chicken for 2 minutes and then mix in black beans. Stir in chipotle powder for some heat.
5. Boil out excess moisture.

Voila! Fancy feast with simple ingredients.

21st Birthday cake for partner's daughter.

The cake is a vanilla and chocolate marble sponge layered with jam and vanilla buttercream. The cookies to decorate the cake are all butter cookies decorated with royal icing and sugar trimmings.

It is a large cake on a 15" board.

Sea Bass w/ Strawberry Mint Salsa (Recipe)

Sea Bass w/ Strawberry Mint Salsa (Recipe)

From a special selection of recipes I've found, I have put together this romantic dinner for two. I should have spent more time on the presentation, but I was really hungry! The Strawberry Mint Salsa is just wonderful. I will definitely be using this with other recipes.

Broiled Chilean Sea Bass with Strawberry Mint Salsa
(adapted from a recipe found in The Seduction Cookbook)

Salsa Ingredients:
10 ripe strawberries, stemmed and diced
? cup chopped Jicama
2 tablespoons chopped red onion
1 tablespoon chopped fresh mint leaves
1 tablespoon rice wine vinegar
1 finely diced serrano chile (remove seeds if you need it less spicy)
Salt and coarse ground black pepper to taste

2 8-ounce Chilean Sea Bass filets (a bit pricey but worth it.)
The recipe I adapted this from called for Halibut, but it was not available. The Sea Bass is much better I think. :)

Cilantro/Mint Rice:
1 Cup White rice
1/2 Cup Chicken broth
1 Cup Water
1 Tbsp chopped Cilantro
1 Tbsp chopped Mint leaves
1 Tbsp chopped green onion
Add salt to taste.

Comments (from The Seduction Cookbook):
Sea Bass, like halibut, is also considered to have particularly strong aphrodisiac properties. Top this amorous denizen of the deep with sweet spring strawberries, chakras-stimulating mint, and serrano chiles, which contain capsaicin, a fiery chemical that causes the brain to produce endorphins, igniting a sense of well being.

Salsa: Gently toss together the salsa ingredients. Refrigerate. This can be made ahead of time.

Rice: Cook rice in water and chicken broth until the liquid is absorbed (about 20 minutes)
Mix in Cilantro, Mint and Green onion. Salt to taste.

Sea Bass: In a cast iron skillet sear the Sea Bass fillet in canola oil. Season with coarse salt and pepper to taste. Once seared allow to cool a bit before placing under the broiler. Place the skillet under the broiler and cook for about 5 minutes on each side or until flaky and tender.

Serve immediately with Salsa on top of the Cilantro/Mint rice

Makes 2 Servings.

1. marinade fish with cooking wine, salt and pepper.
2. Steam along with tofu. Top with ginger slices and green onion for 10-15 minutes.
3. On another pot, bring green onion, ginger, soy sauce, water, black beans sauce, sesame oil, salt and sugar to boil. Pour sauce onto fish fillet and tofu plate.
